I'm pretty new "nooob" to this stuff I have made a few beers and two good Meads. I have been trying to read up on a lot about Braggot's and it looks like the Mead forum is where most of the treads start.

Over the weekend put together my first Braggot and wanted to see if anyone had any suggestions.

Pre boil of 3.25 gallons
3.3 lbs of Wheat LME
.5 oz Centennial 60 min
.25 oz Centennial 30 min
.25 oz Centennial 10 min

Added 3.3 lbs on Clover honey when wort cooled to 100 degrees.

Pitched S-05 at 70 degrees.

OG was 1.079. I think FG should end up around 1.020?
 
It sounds like a nice, tasty simple recipe. I think you may get down below 1.020...true, the Wheat DME has more unfermentables than regular DME, but the honey is 100% fermentable...you should end up in the 1.0'teens and between 8 and 8.5%.
 
Personally, I would add more honey. And make sure not to heat the honey or add it when the wort is still hot.
