I would love some feedback. I have an ipa in mind that I am trying to create. Lately, I have had many well attenuated beers, while the are excellent and very drinkable I am trying to create a chewy, resinous, ipa. I like Green Flash, Red Racer IPA Canada, and others from the east coast many have not heard of (sebago, moat, capt lawrence, ithaca, new england brewing).

I'm shooting for thick, chewy, resinous, but well balanced IPA. For example, even though it's an IIPA dogfish 90 is to sweet and under attenuated for my tastes.

Im shooting for 6.5 to 7 for ABV. Basically double IPA range is ok.

I will use WLP007 as it's my house yeast. I plan on a thick mash at 153-154, 007 typically attenuated at least 75% for me and up to 80% if I thin mash. I like how it flocs and how it works fast. I use a conical and repitch which is why I would like to stay with my house yeast.

I would love some feedback and suggestions.

Notes
 
I would drop the mash temp to 151 and cut the Crystal to .75 pounds since you mentioned you don't like the perception of sweetness. I also have my Munich at about 10% of the grain bill but that's just me.
