Grade of DME ?!

Hi there !

I listened recently to an old Podcast ( Recorded in 2005 ) concerning brewing with Extract .

It was told in that Podcast that there are two Grades of Extract produced in the Industry .

"Food-Grade" and "Brewing-Grade" Extracts , which I didn't know .

I bought last year some DME and I was given a Sheet of Paper which gives the Analysis Data of the DME .

Now , I'd like to know if I can determine the Grade of this DME by using the Analysis Data .

Color : Light

PH ( 10% Solution ) : 5.31

Acidity % as Lactic Acid : 0.94

Moisture : 2.43

Reducing Sugar % as Maltose : 64.23

Protein % dry basis : 4.16

Ash % : 1.50

hmmm, where did you buy it from? i think that would tell you. I htink brewing DME is pretty specializd. The other DMEs are for cereals and other food stuffs that have much larger market shares. THe % maltose might be a key, but thats just a guess. Good luck and hopeully somone else will chime in here for you.
