I was planning to brew an IPA this evening, so I smacked my Wyeast 1056 Activator pack this morning. Within a few hours it was completely swollen. Turns out I am not going to have time to brew tonight, and more than likely will not have the opportunity to brew until Sunday.

Should I re-refrigerate the yeast?

Yes, IMO you should keep the yeast cold. When you smacked it, you just released some yeast nutrient and woke them up. Put back to sleep in the fridge then rewarm/shake a couple of hours before you brew...or make a starter.
 
+1 what these guys said. Throw it in the fridge and you should be fine for Sunday. You might want to make a starter just to make sure your yeast is healthy and working.
