Need a recipe for a tailgate beer

I'm traveling to Maryland to watch my 'Canes whoop the Terps on labor day and I want to brew a beer for my tailgate. I don't have the capability (or the time, I suppose) to lager, so we're looking for a smooth easy-drinking ale with lower OG. There's going to be folks with all different tastes in beer, so there's no use trying to cater to any particular group of people. I plan on having the brew in primary for a couple of weeks and then I'll be kegging.

Sidenote: I've never brewed a SMaSH beer before and it's at the top of my to-do list. Maybe this is a good time to try one?
 
I have made this for my BMC drinking friends and it seems to go over well. Also has a quick turn around time. You can play with the hops amounts to your liking.

I keg hop BM's centennial blonde with cascade and it is excellent. .5oz per 5 gallons. Not bitter, very aromatic and flavorful.
 
I've never dry-hopped before...would I be better off using whole leaf hops?...If I use pellets what do I put it so I don't end up with all that sludge?
 
I have only used whole leaf and I put them in a sanitized hop sack. I'm sure if you used a very fine hop sack that pellets would be fine.
 
Well, I've decided on the centennial blonde. It seems to come highly recommended! I do have a bit of extra cascade pellets, dry hopping with them may be a cool idea...
