I've been developing a house pale ale over the last couple of months, and this is the iteration that my partner, friends, and I like best. Thoughts?
Amounts are for 5.5 gallons.
OG: 1.054
FG: 1.014
ABV: 5.4%
IBU: 41 (Tinseth)
Calculated Efficiency: 77%
88% Rahr 2-row (11lbs)
6% Caramel 60 (12oz)
6% Carapils (12oz)
18 IBU Pearle 8% AA FWH (1oz)
8 IBU Cascade 6% AA 10min (1oz)
11 IBU Citra 13% AA 6min (1oz)
5 IBU Cascade 6% AA 6min (1oz)
Dry hop: Cascade, 1oz
Yeast: WYeast 1007 British Ale
Mash at 152 for 1 hour.
Boil time is 60 minutes.
Ferment at 66 degrees F for 10 days, transfer to secondary and add dry hops. Over 5 days, drop the temperature to 34 and allow to rest for 14 days total of dry hop contact time.
Rack to a keg and add prepared gelatin for fining. Carbonate to 2.4 volumes.
