Need some help tweaking this...brewing for an IMPORTANT occasion

I'm brewing for my sis-in-law's wedding. I have nailed down the styles I want to make and have been brewing test batches to dial everything in. I just got done with a Northern English Brown Ale that came out pretty unremarkable (tasteless).

I know an NE Brown Ale is usually considered a session ale and maybe not the most remarkable with regard to flavor impact, but it seems like a good base on which to tweak. Here's what I started with (extract with grains):

10.6 oz Special Roast
5 oz Victory
5 oz 40L Crystal
5 oz Chocolate Malt

4.6 lb Light DME

.66oz East Kent Goldings (5.3%) 60 min
.66oz East Kent Goldings (5.3%) 5 min

White Labs WLP013 London Ale Yeast

I was think about one (or a combination) of the following:
-Increasing the amount of Victory Malt (how much?)
-Adding some Biscuit Malt (how much?)
-Increasing the amount of EKG @ 60 and/or 5 min
-Adding some Fuggles @ 60 and/or 5 min

I'm looking at brewing another version this coming weekend (2/26 or 2/27). Any suggestions would be SUPREMELY welcome!
