- Tasting Notes
- A very slightly roasty and heavily hopped lighter CDA
This is a pretty straight forward extract with grains brew, partial boil:
.9# crystal 10L
.7# carafa II special/dehusked
.6# special roast
Steep grains in 2 gal @ 152* for 30 mins, rinse thoroughly with 2qts of 170* water. Add:
2.8# alexander's sun country pale LME
1# munton's extra light DME
top off kettle to 4 gal and bring to a boil
1.2 oz Yakima magnum pellets 14.1%aa @ 60 min
.82 oz Amarillo pellets 8.6%aa @ 30 min
4# alexander's sun country pale LME @ 15 min
Whirlfloc @ 10 min
Wyeast yeast nutrient @ 10 min
.5 oz nugget pellets 12.2%aa @ 5 min
.6 oz millenium pellets 15.9%aa @ 5 min
.9 oz Columbus pellets 14.4%aa @ 2 min
.5 oz Amarillo pellets @ 0 min
Chill, strain and top off to 5.25 gal in primary.
Pitch @ 66* and ferment in primary @ 68* for 21 days.
Transfer to secondary for two more weeks, dry hopping with:
.75 oz Columbus pellets
1.25 oz Amarillo pellets
I dry hopped for the last 10 days of secondary, but as a matter of preference you can dry hop for longer or shorter.
After secondary I kegged 5 gal and blast carbed it with 30 psi for three days @ 42*. No shaking or anything, just high pressure for the first three days. The beer was great at this point, but after another week, oh man was it D-lish!!
The other night I followed a pint of deschutes hop in the dark with a pint of my CDA, and not that I brewed HITD or anything, but this CDA stood up nicely and tasted just as good!
Definitely going to be a regular brew for me.
