I don't know if this is more of an a Irish Red as a lager, or a Dunkel, or what. In any case it's delicious. It's loosely inspired by Jamil's Irish Red and Michael Dawson's Irish Red Lager (from the Beer Engine Blog).
7lb Durst Pils malt
3lb Durst dark Munich
4 oz Caravienne
3oz 500L Roasted Barley
2oz Acid Malt for ph adjustment
Mashed at 154.
.6 oz Perle 8% @60
.7 oz Perle 8% @15
Whirlfloc @10
I pitched at 8C and raised about .5C per day for 10 days. Moved it to my basement and let sit at 65F for 10 days. Then racked to secondary, lagered at 33F for a week, bottled, then lagered in bottles for 2 more weeks after it was fully carbonated.
It's very smooth. Maybe a touch sweet for my taste, but one of my coworkers says it's the best thing I've ever made. (He's a pretty big beer enthusiast, I'm a little surprised he picked this one.)
I think if I brew again I'll mash at 148 instead of 154, and maybe switch caravienne for caramunich.
