How much LME do you think would work for this?
I'm thinking something like a couple tons of LME, 1 lb Munich, 1lb dextrin, 1 lb Crystal 40 for a 5 gal batch?
If I get some time this weekend, I will just go ask them. They usually are pretty open when you ask em at the brewery.

we brewed this last week and although we did not hit our goal...a little sugar helped with that . It's still rocking the primary and has a deliciously floral hop smell to it. After primary finishes we will check it to see if it needs any champagne yeast to finish it off although we normally have great attenuation. I will keep the thread posted as it progresses...next step is to dry hop for 30 days.. I never ever bottle anymore but i think this one will be going in wine style bottles and conditioned in them as well.
Although I am sure you know, make sure not to carbonate in wine bottles. Champagne would work fine though.
dry hopping for thirty days is probably going to be excessive, and could draw out grassy flavors that will not make for a good clone of this beer.
