We're having some people over tomorrow night and will be cooking Bo Ssam (Momofuku-style, see here for recipe: Bo Ssam). Looking for some suggestions on beer pairing. I'll be pouring HB WH Honey Porter for anyone who's interested, but want to pick up some craft selections too. Was thinking IPA, or other hoppy styles, might be good to cut the rich fat of the pork.

Also open to suggestions on apps/sides. We have the standard stuff planned so far:
Gyoza, Rice (plain or fried, not sure yet), kimchi, pickled daikon, sauces, bibb lettuce, etc
 
I have found that a Korean beer like Hite, Cass or even the old stand-by OB goes great with this type of meal. Then again Soju or makkuli (if you can find it) goes even better.

Your banchan selections sound great, I would stick with just a sticky rice like is served in most restaraunts in Seoul. Things like Pajeon(korean Scallion pancake)Kimchijeon (kinchi pancake) and Japchae are also good as banchan.
