Last weekend I did my first simcoe single hop IPA, inspired by Mikkellers.

5.0 gallon

11.5# simpsons golden promise
5oz Munich
5oz Cara 20

75%eff OG estimate 1.068
IBU around 60 (or a little over)

1oz simcoe @ 90
1oz simcoe @ 10
1oz simcoe @ 5
1oz simcoe @ 3
1oz simcoe @ kettle off

measured OG 1.070 @ 75 degrees

probably dryhop with two oz or so

The ferm chamber smells amazing!

what ya think?
 
I'll be curious to know how it goes. I've got a freezer full of Simcoe and I'll probably do a single hopped IIPA with it. I've always liked Weyerbacher's Simcoe IPA and so I'm looking forward to trying one of my own.

So kudos to you. :mug: I'm sure it'll be tasty.
 
i sure do love me some simcoe. My last 4 batches have been simcoe only and I have been very pleased with the final product. The hop flavor is strong, but very clean. I think you will like it, very much.
 
If it tastes the way it smells, it will be awesome. This is the first time i've opened a package of simcoe. I scored a bottle of the wyerman simcoe and didn't really find it to be that great, but i really did like the Mikkeller's but its $5.50/12oz. a little high.
