I am doing a pale ale recipe that calls for 3.3 lbs. light LME and 3 lbs. amber DME added to the wort prior to boiling (after steeping the grains). I would prefer to do a late extract addition such as Palmer and HBT suggest for better results. Which extract should I add first after steeping the grains prior to bringing to a boil? When should I add the second extract addition?
I am thinking of adding the DME first and then adding the LME at 30 min., but I may wait till 15 min......
