I have a commercial beer in a keg in my kegerator. Do I need to have the CO2 on all the time at my dispensing pressure of 10 psi or just when I serve?

Treat it no differently than you would your own kegs. You don't have to have it on co2 all the time, but make sure to put 10 to 12psi in the keg before disconnecting it from the gas.
