i brewed a wheat beer in january. it was in the fermenter for three weeks and has now been in the keg for two days. (i know its not done carbing yet, though it does have some) i just tested to see what it tastes like. over all pretty good. but it had this bitter kinda tartness at the back of my mouth. i used 10lbs white wheat malt 2oz cascade bittering and 1 oz cascade aroma. so i dont think i over hopped it. actually it tastes pretty balanced (for me anyway). i was wondering if it still needs some time to mellow out? thanks guys
