So I recently just started mashing really efficiently. I use to step heat my mash putting it through all the different steps like protein rests and the whole sha-bang on a stove.

Now I do a one step infusion at 152 in a ice chest.. So easy!!!!! Grain in a mesh bag. Nothing easier.

Here's what I notice... I have a super fast highly active fermination in the first 24 hours. Then it seems done in 7 days. S-air lock is not bubbling. Tastes done. Gravity at 2 points before finishing. A couple days more its done. I hit my target OG and my FG.

Is it just simple sugars from the lower temp mash?
