I am wanting to buy a Bavarian Hefeweizen Extract True Brew Kit, how close is this kit to a Paluner Hefeweizen. If it is not close is there a extract kit out there that is close.

I dont know what a true brew kit is, but as long as more than 50% of the malt is wheat (or almost all wheat extract), and you're using liquid bavarian wheat beer, or weihenstephan yeast, and ferment in the mid to upper 60s, it'll be good enough.
 
Not familiar with that kit, but like Robert said, as long as you use about 50-70% wheat malt, use an appropriate wheat yeast strain, and ferment at the right temps you're going to end up with something very close to many of the great yeast beers you've tasted before.
