I have a bunch of extract that I need to brew with and wanted to do something similar to the winter solstice clone recipe on here and came up with this, plan to brew tomorrow and have ready for thanksgiving. Any feedback would be awesome.
6 lbs light dme
1.5 lbs caramel 40
1.5 lbs caramel 80
1 oz northern brewer @ 15
S-23 yeast @ 60 for 3 weeks, drop to 45 week before kegging.
1/2 tsp cinnamon @ flame out
1/2 tsp ginger @ flame out
1/8 tsp nutmeg @ flame out
.75 oz vanilla extract in keg
Beersmith says 5.4%, srm 18 and ibu 14.
