I was researching some honeys we have here, and there isn´t such a great variety. But I found a very special one, is called Jataí honey. It´s made out of stingless bees, and they make very little honey at a time. It costs 5x the price of regular honey (~35 dolars for 0.5kg), but on the website I was looking at they give you a warning to keep it on the fridge because it might start fermenting naturally (it´s more hidrated they say).
As soon as I get decent at this I´ll give it a try.
