He adds allspice, star anise, caraway, orange peel, and candied ginger. I've never made it though, but it sounds interesting.

I would suggest looking for a Christmas Ale recipe.. see how much and what kind of spices they add, then add that to a standard Dunkel. Keep us posted on how it turns out
