    Pretty sure Crispin has done an all Brett Cider. They seem to know a thing or 2 about cider.

    Brett Claussenii - secondary or bottle condition?

    If it were me I would use the Brett WLP644 instead of the Brett C to get those characteristics. Its a year round strain as of this week so your LHBS should carry it soon. Realistically Brett can give a 100% fermentation over time...I wouldn't bottle a Brett beer until it was under 1.005

    WLP670 will never make a beer "sour". Brettanomyces doesn't sour. Bacterias like lacto and pedio just to name a couple are souring microbes. Brettanomyces isn't a bacteria, it's a wild Sacc strain.

    I used it on a Wheat IPA..loved it over the 1056 version I did. I've had quite a few beers with this yeast since late summer and all have been great with it.

    Is your primary fermenter a glass carboy? If so there is no worry of contaminating it, plastic on the other hand would be a concern. Regardless of the primary strain you use, you may want to let the gravity decide when to rack to secondary and not time. After 7 days you maybe fermented so far...

    Does anyone own the book "Clone Brews"? I have some questions on the directions.

    In my honest opinion those recipes aren't really close to clones, they will make a beer in the "style of" a commercial beer.
