    Made JAOM 3 weeks ago

Some cranberry melomel I started in early December(Dec10) is still rolling along. It did go dormant for a couple weeks while I had my AC off (vacation) though. So i guess that makes four weeks and counting of bubbles. However my take on the JAOM (apples instead of oranges) that I started the...

    Success! Mostly...

I drank a bottle of it last night and was pleasantly surprised how well it turned out. My taste tests early on weren't promising... I have a couple other bottles that I plan on keeping around for a quite a while to see how it changes. I'll open it up in June or so...

    Success! Mostly...

So, I started a mead in some lean financial times back in December. It was a personal take on the JAOM, with apples instead of oranges. I only used 2# of honey, and later learned that would turn out dry. So, here I am, six weeks later and it isn't half bad. I think I'm hooked and have started a...

    Broke College Brewer

I used the cheap "clover" honey on mine. Seems to have worked out so far! I used the quotes because I'm a bit skeptical... lol

    And....nothing

Gypsum? Just curious... So I can make a short trip out to White Sands, NM and make a nuclear mead?

    When to add fruit?

I tossed a bit of fresh fruit, cranberries in one, apples in another, in the primary. I don't have a whole lot of experience here, but I gave it a taste to see how it came along after three or so weeks in and it was already quite tasty. From what I've gathered, do what you want, see what works...

    Melomel question for newbie

Did you put in whole berries or chop/blend them up? From my short experience, the finer the cut, the faster the sink.

    My JOAM

I would also like to know. I started mine on the 6th(Dec) and am anxious to see how it looks when I get home from the holidays!

    Blueberry mead

I imagine it would be fine, just give them a wash and maybe blend them up a bit.

    tart mead

I added a lime 8th to a half gallon and it really took things over. I removed the slice and when I tasted it last week, things calmed down, so maybe time will fix things.

    Raw Honey

This all sounds good. The site I found offers raw honey in the comb, and filtered without wax. They said that the honey will usually crystalize when purely raw. My goal here was to make a mead with honey from my home state (New Mexico) and try my luck at making some local flavor mead. Perhaps...

    Raw Honey

Anyone ever used raw, unfiltered honey in a mead? It seems like this is as close as one could get to an ancient-type brew. I would pour it through a tea strainer I suppose when I went to bottle, but I'm curious how the wax bits, pollens, and other bits might interact. I found a site that sells a...

So I made a trip to the grocery store...

I opened one up today to stir it up and reoxygenate, it smelled like it had developed quite a bit of alcohol. So I gave it a little taste and it was VERY limey, so I added some more honey to sweeten it up. From the sip I put in a shot glass, I would guess it's at about 8 or 9 percent. Was...

Advice pls: Adding coffee to secondary

Whereas my experience with mead is little to none, my experience with coffee is significant. I would definitely cold brew the coffee, I bet the oils would really throw things off. As for contamination, you could microwave the beans for a little bit but not long to damage the beans.

    aeration of must

My JOAM iteration took off in about 3 hours after some blending and a good few minutes of shaking after I got it into the jug. I am also interested to hear about this reoxygenating though. A couple of my bottles have slowed down a bit and I'm wondering if I should pop the balloons off and give...

    aeration of must

I doubt I'm the best person to answer, but I would think trying to properly sanitize an airstone could become a pain. I used a blender with my first batch. I put about a quarter of the fruit I planned on adding, some honey, and water and set it to chop. Then I added it to the rest of the jug and...

So I made a trip to the grocery store...

Joe said it was cool. He didn't mention apples though... If this turns out "good" enough, I'll stop being an affront to the craft lol.

So I made a trip to the grocery store...

I don't plan on touching it until the fruit sinks and even then it will just be to rack it. I'll probably give it a little taste around 8 weeks just to see what's up. I'm in no huge rush, otherwise I would just go to the liquor store and have instant gratification! Judging by the process so far...

    Skyrim and Mead

I have to admit, this game did cause a little inspiration to brew my own. If my attempts turn into success, I might give the junipers a try.

So I made a trip to the grocery store...

So far so good, it's bubbling away and there have been no catastrophic balloon ruptures. I would go to a brew store if there was one anywhere near me. This is more of an experiment to see how it turns out, if it works out well enough I'll order some legit equipment from the internets.
