Is it better to divide my 5g down to 1g bottles or even 2L bottles? Which one would be better?

I have 5g of finished apfelwein. Fg of ~7%. Could i now freeze this to make applejack?

Question... What is the opinion of adding Potassium Sorbate and Campden when you rack into secondary? Wouldn't that prevent a renewal in fermenting and keep it sweeter? Also, I don't completely understand the need for campden in the initial mixing? Could someone explain that to me?
