    If I rehydrate my yeast, how long can it sit in the water until I pitch it?

    I'm going to start brewing in about three hours, and I'm wondering when I should boil some water for rehydrating my yeast? Seems like it might take awhile for the water to get down to 90 degrees after its been boiled. If I boil now, can the yeast sit in the water for a couple hours?

    Thanks for the notes, everyone. I think doing a second dunk sparge is the way to go, but I'm not sure if I have a pot big enough for two additional gallons of hot water, plus the grain. If I'm going to need to buy another pot, I'd rather just go ahead and upgrade to a 40 quart now... Always...

    So, are you saying I should hoist up the bag over the kettle, and then pour the hot water over the grains; or should I put the bag in the second pot with the hot water, and then pour that into my boil kettle?
