Critique of my Brown Ale Recipe

Just my opinion - but you might want to consider cutting the steeping grains down to about 250g of each. It's usually recommended to keep the amount of the these to about 10% of the total "grain bill" so they don't "overpower" your brew. Cheers

Turned out great, but did need several months of conditioning to smooth out. Did you brew this up?

    Diplomatic Homebrewing (as in overseas)

I've used them in every brew except the first (I've done 4) as aroma additions for the last 3-4 minutes of the boil. I suspect that since they were found "past their prime" that I'm not getting a lot from them, but what the heck - they were free and they're local! Cheers.

    Diplomatic Homebrewing (as in overseas)

Second batch - an American Pale Ale. Made with Lite DME, some C120 I roasted in the oven to get a little more color on, some Cascade and Willamette hops with an IBU of almost 40. Cheers!:mug:

    Please Critique my first brew

Your fermentables are fine, are you changing out the yeast? The Coopers "lager" is truly an ale that ferments out at a higher temp, around 18C. If you use the WLP830 you need to be considerably cooler. As a rule of thumb, being lower within the acceptable temp range is better unless you are...

    Best Water to use?

The rule of thumb is that if you can drink it you can brew with it. Now if you get into trying to clone specific recipes, you may have to adjust the chemistry of your H2O, but for most of us that's not a problem. I've brewed all over the world, and have found if it is safe to drink, it has...
