Adjusting grain bill for decoction or not

WOrking on a weizenbock recipe and plan to do a step mash/single decoction a la Gordon Strong's book's weizen mash schedule. Lots of recipes have small amounts of special B and melanoidin which appear to be used to replace decoction, however no one actually says this. Is this true? Also, BJCP...

Poll - US 05 Temp to avoid blowoff

I am trying to find a temp to ferment US 05 below which blowoff becomes less likely. Please fill out the poll only if you have good control of fermentation temperature, meaning your thermostat probe is inside the fermentor or taped and insulated on the outside and you have active cooling. I...

    Corny shape slowing fermentation?

The fermentation does take a little longer and doesn't seem as vigorous. I think i am underpitching, despite a 3-4 liter starter. I am not sure of the storage question.

    Corny shape slowing fermentation?

Thanks. There are other possibilities, mostly starter related, that are probably to blame.

    Corny shape slowing fermentation?

I converted recently to using cornys to ferment and have noticed fermentations seem to take longer than with carboys. I was wondering whether it could be because of the reduced surface area to volume. I have searched high and low for some research on this to no avail. Does anyone have...
