    Ok im going to look into the Kentucky common but I'm going to try the small ale first. I have a feeling it won't taste as good as my other brews but now I'm curious. I'll start it Monday after I bottle the scotch ale. Gambit

    I know that's whats making it hard. I was hoping to find a full strength ale but no luck. I did find quite a few small ale recipes. I assume that would most likely be the rations to the troops. Gambit

    Revvy I found this as well. Read the second post. Civil War Beer Recipe - Homebrewing - BeerAdvocate It has a bulk recipe and some peoples interpratations. The grains are just listed as malt but I dont know malt. Gambit

    It calls for a quart of maple syrup, a tablespoon of spruce extract, and four gallons of water. I also found similar recipe that said to add a half cup of hops. Now please correct me if I"m wrong but wouldnt that be a really weak beer? I'm thinking Less then 3% abv. I Plan on trying to make...

    Thunderpanda, Only the one bottle in the pic was done in plastic...the other 15 or so were done in glass. That one i poured out but the rest dont have that ring so im assuming theyre ok. Gambit

    It was some sort of wine yeast. So to fix it I just slowly take off each cap and then recap? I assume I don't need any more sugar? Gambit

    Ya I tried to pasturise a few bottles today and the top shot off one... Boy was the missus mad to see cider dripping from the ceiling. I got a few I put in the fridge. I'll have to try one tonight

    I bottled my first batch of cider a few weeks ago. Today I grabbed the one Plastic bottle i used and its all deformed and has a ring around the inside above the liquid. I dont see this ring in any of the glass bottles. I did drink one about a week after bottling with no ill effects so i assume...

    I'm thinking either a red or a brown ale, probably a brown with the colors the grains put out. Id like something with a hint of chocolate and caramel, but I also feel there should be a 3rd flavor as well. Gambit

    I guess this would be a partial mash. I'm gonna try this as a 2 gallon test batch. I'm thinking a pound and a half of light dme and a half pound of honey for the base, and chocolate wheat and crystal 80 for grains.     canijun im in the downriver area, not sure if im in lincoln park or southgate, depends on the map program. I dont have a airlock to watch, im using a mr beer keg sense this is my first try and i dont wanna waste 5 gallons if i screw up. Gambit

    Im made my first cider today. Followed a recipe but missed the part about waiting 24 hours to pitch yeast after the campden tab. I'm sure this has been covered before, did I kill my yeast or is my fermentation just gonna be slow to start? Sorry if I'm beating a dead horse I'm usually a beer...
