    Wild combination

Sounds like a chocolate stout on steroids! Might have to give that a try.

    The fascination with brewing beer

I have 4 cats, and none of them are interested at all in my blow off setup while it's bubbling. I'm kinda glad, though, as I really don't want them messing with it.

    What are you drinking now?

Currently drinking my Oatmeal Stout, but I don't really like it. The recipe called for 1/2 stick of brewers licorice, which I was hesitant to add, and I wish I hadn't. I don't really care for licorice, and I guess I should have gone with my gut. The initial flavor is fine, but the finish is...

    Primary a bit tart

It's just young beer. Give it some time to mellow out, especially with a 1.060 OG. Just let it age for about a month and all will be good. When in doubt, use the 1-2-3 method (one week primary, 2 weeks secondary, 3 weeks in the bottle). Your beer will be excellent in six weeks. :ban:

Just got batch number 2 in primary

If that were only true... five gallons runs out A LOT faster than you realize!!!:drunk: Just be sure to keep your primary full at all times and you'll be OK!

    Pretty excited...

Congrats, SK. It really is a great thing to drink beer that you made yourself - there's a sense of pride in it that I can only compare to creating a work of art. Enjoy it man!:mug:

Is this an infection? w pics

Kinda looks that way to me. I've never had an infected batch, but from photos I have seen that looks like it. Maybe someone with more experience can let you know what to do. How does it smell? Like vinegar? Have you tasted it? These might be a more reliable way of diagnosing an infection.

    Racking practice

Try using FlyGuy's T-siphon. It works like a charm and costs about 3 bucks. I've never had it break siphon except for my own stupidity, and even then it's really easy to get the siphon going again. https://www.homebrewtalk.com/showthread.php?t=25774&highlight=flyguy+siphon

    Noob with a fermenmtation Q

Thanks BierMuncher, that's what I thought. I usually leave my beers in the primary at least a week, usually two. Yesterday I wanted to get my beer out of the primary so that I could brew another batch quickly, and my beer had been in the primary for five days. I figured it would be OK because...

    Noob with a fermenmtation Q

I agree totally with this statement, but I have a question about racking the beer off the trub. Even if you rack your beer to the secondary sooner than seven days, wouldn't there still be enough yeast in the beer to clean up the waste products? Anyone have any insight on this? The reason I...

    Possible Infection??

Yeah, I agree with the posters above. It's your yeast. I have seen this once in one of my beers, and it was when I added too much irish moss in the boil. I think it may have made the yeast clump together like that, but I'm just guessing. It should be fine, mine was.

    Who's growing Hops this year?

I plan on starting a hop garden this spring also. Gonna plant some Nugget, Willamette, Sterling, and Centennial.

    The hop shortage

I'm with GreenWolf. Don't look look at this as a problem, look at it as an opportunity. There are many varieties of hops that are still plentiful and readily available. Take a look at hop profiles and see what comes closest to the taste and aroma profiles of your favorites if you want to...

Where to buy Czech Saaz hops?

I buy from freshops.com. They don't have any Saaz, but they do have Sterling at $1.60 an oz. Keep in mind that these are whole hops, not pellets. From what I have read, Sterling has a very similar profile to Saaz, but with fewer grassy flavors. With the shortage as it is, I have been buying...

so what are people brewing for the holidays???

I just put an Oatmeal Stout in the primary on Sunday. I thought it was going to blow the lid off of my fermenter last night! Crazy vigorous fermentation with Nottingham yeast!:rockin: I also have a Chocolate Stout that I'm going to give away as Christmas gifts. I brewed that batch about a...

    Irish Moss

Thanks for the insight, Dr. Malt. I'm not too worried about the clarity, I was just hoping that it wouldn't affect the taste. At my LHBS, an ounce of irish moss is only $1.55, so the cost is fairly minimal. Thanks for the info, though, as I had no idea that adding too much would actually...

    Irish Moss

Not to hijack the thread or anything, but I have a question about irish moss. Does anyone know what happens if you add too much irish moss? I just brewed an ESB, and instead of adding the 2 teaspoons that the recipe called for, I added 2 tablespoons. Oops! I don't think it will have a...

    Beer Software for Macs

I agree, BeerAlchemy is good software. You can get a trial version from the website so that you can try before you buy. A free program that I'm just starting to try out is Qbrew. Seems pretty good so far, but it's not quite as full featured as BeerAlchemy. It's written for PowerPC, but I run...

    Yet Another Bottle Bomb thread!

This particular one was a Sam Adams bottle, as are most of the bottles I use. The hardest ones for me personally are Warsteiner bottles. Those are a real pain to cap!

    Yet Another Bottle Bomb thread!

Oh, I wasn't talking about replacing her as the capper, just saying that the bottles might have gotten damaged because she was having some issues getting the caps on this time. I guess I didn't word that right. I'll hold the bottles for her next time.
