    Activity in Fermenter

Huh. I never heard of that but, well, okay. Have fun. I hope it turns out delicious.

Why are you "removing" or "swapping" hops? Never heard of that.

You are seeing just exactly what you should be seeing, a nice active fermentation.

    Joe's Ancient Orange Mead

I would add some K meta to be sure the yeast is dead, then I would rack it a few times. I know the recipie says don't, but desperate times call for desperate measures. This has happened to me too. Not with this particular recipie but another fresh fruit wine recipie.

    Semi-Dry Tart-Cherry Melomel

I'd say giving it a good shake once a week can't hurt.

I'm going to have to give this a try. Good job!

    Cranberry Wine

I couldn't find any white cranberry juice anywhere out here in central kentucky, by the way. So I gave up on that idea. If I ever find any though, I will make some white cran wine, I went to a wine tasting festival a while back and one of the local wineries was selling white cranberry wine and I...

    Cranberry Wine

Ended up doing just regular cranberry juice cocktail (about 12 liters) and a can of white grape concentrate and 10# sugar. Topped off to 5 gallons with spring water. Racked into secondary today. I had too much in the primary fermenter to fit into the demi-jon I used for the secondary, so we...

    Joe's Ancient Orange Mead

It will be fine. My first batch I did for a "Rennaisance" wedding and everybody loved it. Served it about three weeks after I bottled it. People wanted to buy bottles of it! I honestly didn't think anyone would like it because it doesn't taste like wine you get from a store. But they did. I was...

    Cranberry Wine

Thanks for the recipie. I suspect the extra berries are yeast nutrient? What modifications do you plan to make with this recipie next time? I think I will try this one, with a modification of my own. I'd like to do this with white cranberry and white grape, with maybe a bit more sugar. What do...

    General Concentrate Wine

Can I just use appropriate quanities of regular juice (such as cranberry) since, I live in the country and the frozen juice selection at my local store is very limited. We've got the basics only. Besides, if I bought 10 containers there wouldn't be anything left for anyone else. :-) I saw...

I use the spring water because it tastes better.

    Joe's Ancient Orange Mead

I use store bought spring water for my Meade, as tap water is not sterile and ours here is a bit hard. I warm the honey and some of the water together so that it will incorporate easily, and also to make it easier to get into the carboy. (I make mine in 5gallon batches.) Hope this helps. Good...

    General Concentrate Wine

Great! Thanks for the reply. I love cranberry wine, but I'm a cheapskate and don't like giving $12-15.00 a bottle. Would rather make my own.

    General Concentrate Wine

Has anyone done a straight cranberry or white cranberry version of this? This looks like something I can handle as I am fairly new to this wine making hobby. Have done JAOM a few times now which has piqued my interest in wine making. Thanks for the instructions.

Looking for a cranberry wine recipe suitable for a beginner. (Me.) Thanks!

    Joe's Ancient Orange Mead

I always make the JAOM in 5 gallon batches as 1 gallon just doesn't last.:) Yes, basically scale the recipie up. Here's what I do: 5# honey= 6 cups, 3# is 4 cups and 16 cups is 128 oz/1 gallon I use 15# honey or 144 oz plus 4 gallons of spring water. I have found that zesting the oranges...
