    Wort chiller vs. Ice Bath

    i just got a solid copper reverse flow wort chiller ( copper pipe inside of copper pipe, coiled) and i'm not looking back!! this thing takes in boiling hot wort and dispenses 80 degree wort with a quickness. I can drain my boil kettle in 6-8 mins.. almost just like this one...

    Oak Infusion Spirals

    I sanitize my oak chips or spirals in water. I place them in a dish and boil them in the microwave then into the beer they go. I like the essence the water extracts during the boil - is the reason i pitch both. I age to taste and rack off of them when ready.

    over carbonation with bottling

    you cant backsweeten with fermentable sugars or you are going to over carbonate, because those sugars reactivate the yeast in the bottle. you will be hard pressed to get a sparkling sweet cider out of the bottle. this is easier done in kegs. good luck though.

    nice score man! people pay like 150$ for that starter kit these days. i don't think the vintage beer will be any good after years in a FL Attic. But you can get new seals and reuse the bottles!!

    As long as you don't under pitch your yeast you shouldn't get any off flavors from vigorous fermentation.

    After drinking a case and a half so far i am still baffled as to what they put in here! mmmmmmm sooo tasty!! Can't wait to refill all these bottles with homebrew and then gift them to some one, they will think they are getting pumking! haha :D

    it will carbonate, just let it sit out of the fridge for the next week and a half then open one to test the carb levels. Chilling off yeast cells just puts them to sleep. you have to heat (pasteurize) them up to kill them.
