    Rauch Ale Recommendations

I have become the proud owner of a 55 lb. bag of Weyermann rauch malt. I want to make a rauch ale, because my lagering refrigerator is busy with Oktoberfest right now, so no traditional rauchbier lager for now. I will partial mash as much rauch malt as possible, (5-6 lbs.) the rest will be...

    Red oak cubes???

For my second annual traditional New year's Day brew, I will be making a Wee Heavy Scotch ale. I thought this would be a good one to get some oak flavor into. I have some oak firewood that has been indoors for 5 years. I wanted to cut some into cubes and toast it myself. After doing some...

Looking for partial mash Rauchbock recipe.

I was figuring on 6.6 lbs. of Munich LME and 3 lbs. rauchmalt, but I don't know what to do for dark grains and/or pilsner malt. I would also be using Wyeast 2206 or WLP833 and some combination of Hallertauer and Tettnanger. Help anyone?

Smoked Porter from grains and extract

I have made a smoked porter using a Brewer's Best Robust Porter and adding 2 lbs. of smoked malt. It was excellent, but now I find myself wanting something more from the dark grains. I have 1 lb. each of Black, Chocolate and Caramel 120 to work with. I thought I would go with: 2 lbs. Smoked...

    Hops schedule for APA

My LHBS was closed for vacation, so I grabbed a Brewer's Best American Pale Ale locally. O.G. is 1.051-1.055. I would like to hop it up a bit more. The kit came with 2 oz. Cascade and 1.5 oz. Willamette. I also have 1 oz. of Chinook on hand. I prefer a citrusy APA like Sierra Nevada but I want a...

    Help with barley wine

I want to make a barley wine with a goal of 12% ABV. I was wondering if Safale US-05 could tolerate that or if anyone has a good yeast recommendation. I'm also undecided on my hops schedule if anyone has some help for me there, too. Thanks.

What would you call this recipe?

...and will it work? I'm fairly new to partial mash brewing, so help is appreciated. I want to steep in grain bags for 60 min. at 150: 3 lbs. Pilsen 1 lb. Vienna .5 lb. carapils .5 lb. smoked. (I just wanted the smoke to be there in the background.) Drain and rinse the bags...

B.B. Robust Porter With Smoked Malt

I was thinking I would like to brew a Brewer's Best Robust Porter and add 1 1/2 lbs. of smoked malt to it along with 1/2 cup of black strap molasses and 3/4 cup of brown sugar. I will double up on the Nottingham yeast. I've made the Smoked Porter kit before and found myself wanting more...

    First Year Brewing

I got started brewing last Christmas...a gift from my wife. I brewed 23 beers and made 4 wines in my first year. At first it was kits, then I started tweaking and finally I'm creating my own recipes. My best effort is a 10% Belgian Strong Ale in corked Belgian bottles. I gave some away as...

    Anybody smoke their own grains?

I was sitting by my fire pit on my patio enjoying a couple of Oktoberfests with a nice smell of oak smoke in the air. I started to wonder about smoking my own grains for a rauchbier. Anybody ever done this? I believe beechwood is normally used. What about oak or cherry? What methods or equipment...
