    If you want a weaker/lighter 5gallon batch then add the water. Most people like a stronger/thicker style of that wine and would stick w/3gallons - if you want to only make 3gal then it might be a good idea to get a 3 gallon carbouy. The excess air won't hinder fermentation, but it may risk...

    Bottling cloudy wine

    I think it looks about as clear as it's going to get on its own. A local brew shop can filter it for less than $10 or you can get a vinbrite filter for $30 both of which work fine and will make it crystal clear. Unless you let it sit for a few more months it's not going to be perfectly clear...
