    skipping the secondary

    I was in my LHBS and his said the current trend is to moving away from the secondary. He said he never uses a secondary. I'm on the fence. I never did any real "scientific" tests to compare the two. Just because we can make more work for ourselves doesn't mean it's better.

    First Batch - Bottling questions

    I was almost concerned when you mentioned real fizzy bubbles. That was always a character of my spoiled batches, but it seems like your batch will be fine. Don't knock dry yeast. Some of it is very good.

    Austin Homebrew Red Ale Kits

    At AHS there doesn't seem to be a mention of roasted barley in the recipe. Some people recommend 1 oz. of roasted barley to get a nice red color. I probably should focus more on the flavor than color anyways.
