    The silicone is flexible, so it will flap down over the gap left by the paper. As for the concern about rapid fermentation blowing krausen out of the fermenter and getting the silicone stuck in the "open" position, my solution is not to fill the vessel to the top.

    I think that the flavor is the combination of the "normal" beer and bacteria producing a vinegary taste. If I let it go further, the bacteria will convert more of the alcohol to acetic acid and make it bad.
