    My man that sounds fantastic, no idea about the zests but i would also love to try brewing a New Zealand ipa like this. Although wouldn't you be better using those 30-35 min additions around the 5-15 min mark? Get more flavour and aroma from them.

    I would simply use 1oz amarillo at 60min, 15min, 5min then dry hop the last oz. That might push around 40-45ibu if you don't consider that too bitter?

    What temperature is it in your keezer? It sounds like it might be too cold for natural carbonation which occurs at ale fermenting temps. Room temperature is good.

    I can only get my hands on magnum and cascade. According to the sierra Nevada website magnum are used as finishing hops along with crystal and citra. You're probably right though to just use cascade for citrus flavour and aroma.

    Well spotted thanks, i forgot to mention i would be adding 2 pounds of light DME and 2 pounds of honey to boost the OG as my mash tun cant hold more than about 13-14 pounds of grain so i will amend the recipe.

    In that case i would use the willamettes for bittering and keep the citrus flavour and aroma of the cascades for you later additions. Don't have much experience with willamettes but aren't they supposed to be kind of grassy?

    I would save the nice cascade hops and possibly Willamette hops for later in the boil. Use a hop with a higher alpha acid like magnum for your 60min bittering addition.

    Both the Toronado and Monk's Kettle look like the business in SF. I'd love to spend a long time in San Diego but the SWMBO wouldn't be too pleased if based the entire trip visiting breweries and alehouses. She want's to go to San Diego zoo because it was in the movie anchorman.
