    Oktoberfest Taste Test

    I prefer Ayinger, Wiehenstephaner, and Paulaner. Sam Adams last year was really sweet. This year it's much better.

    Finally made my first accidental sour...

    So, I started an oatmeal porter a few months ago, planning to prime with maple syrup and have a breakfast porter. :) when I retrieved it from the basement, I noticed the lid of my brew bucket had cracked. Inside? MAJOR FUNKYTOWN. I racked it out from underneath, tried a bit.... Not horrible...

    sediment free beer. help!

    Yup. Filter and force-carb in a keg. If you bottle condition you'll wind up with at least a little sediment.

    A B hop give-a-way Hallertau

    It'll go in any kind of German ale or lager, most Belgians. You can even use it in virtually any beer that doesn't call for much hop aroma. Like stouts, porters, reds, whatever you like. Hell, a Maris otter / Hallertau SMaSH is one of my favorite batches ever.

    Highly doubt i will ever buy leaf hops again.

    I have dogs. Hops and dogs don't mix. Leaf hops get little bits everywhere and I have to spend ages cleaning it all up. Pellets are better for me.

    Hallertau and....

    Hallertauer hersbrucker has been my go-to for a while. I think I could be totally happy just buying Hallertau, Magnum, and Fuggles.

    What's on your Christmas List?

    I wouldn't mind a plate chiller and a chest freezer. Or a stir plate. But I already upgraded my kettle and burner, so I'm good for this year.

    Buying a Brew Pot

    Stout Kettles. I just got a 15-gallon. Pricey? Yes. But the build quality is incredible. You'll never buy another unless you just need to go bigger.

    I just received mine last month. They said they were backed up on custom orders probably well past new year's.

    High sodium / dissolved solids

    So, just got my water report back from Ward Labs, and a few numbers jumped out at me: Total dissolved solids: 524 ppm Sodium: 159 ppm Sulfate (SO4-S): 26 ppm Chloride: 150 ppm Total alkalinity (CaCO3): 84 ppm So, with as much as I'll need to dilute this stuff, am I better off just buying...

    Sucess rates....

    100% here. One batch had a bit more sediment in the bottle than usual, one somewhat overcarbed, and one that I nailed the style I was aiming for, I just wound up not liking it very much 5gallons later.

    What is the most versatile base malt?

    I've got Maris Otter and Vienna. With a bit of roasted barley, black malt, or 60L I can do most of the brews I want to. If I need anything else I'll pick it up per-batch.

    Thinking about an Oatmeal Stout (primed with maple syrup). Then a Westvleteren clone. And then another batch of Oktoberfest. Maybe two batches - I love that stuff.

    Heh. Nothing, I suppose. Honestly though, I'll wait to see the analysis. They've apparently got a really new softener that's supposed to be very salt-efficient. If the result is too sodium-rich I'll just figure out a good dilution ratio. I'm just complaining about how my dad had his new house...

    Sorry, I meant two years, not weeks. And I checked, there's no cutoff valve before the softener. I guess my dad figured he wanted soft water to wash his cars. The funny part is the city water isn't bad - I used to use it at my old place.

    Ok, so for the next two weeks I'm in a tiny place since my wife is doing some post-grad work in Chicago. Which means I'm migrating my brewing activity over to my parents' house, where there's loads of space. Here's the problem: their new place has a water softener system on the whole house...
