    Wyeast 3724 Belgian Saison - they were right!

    Sheesh, no idea how I'm going to get it up to 90+ unless we have a major heat wave. Right now it's sitting about 76 and bubbling every 6-7 seconds. I'm going to take that as a good sign. Too bad I can't leave the heating pad on overnight.

    Stuck somewhere between 1.030 and 1.025. Darn it, should have read this thread first! Held my fermentation way too low (for two weeks). Could have just taken advantage of Southern California summer! Now gonna have to do this the slow way . . . gave 'er a good, stiff swirl and have got 'er...

    Is adding spice to a beer in secondary or at bottling a sanitation problem?

    Update from time of bottling: there didn't seem to be anything noticably "off" about the smell or taste of the beer at bottling time. It tasted like a basic amber with just a hint of spice, more on the nose than the palette. I boiled more (dried) spices along with the priming sugar to try and...

    Thanks for posting this - I was just wondering about the same thing! I'm brewing the pumpkin ale recipe from Brewing Classic Styles, although with significantly reduced pumpkin. The book suggests to add spices at secondary, no mention of boiling or diluting or anything. I just dumped them...
