    I think all suggestions here will make a great beer, but IMO I like a little more wheat in my kolsch. I would mash at 150, and not any higher....grain of salt

    Large amounts of Biscuit Malt??

    I have used 25% biscuit malt before. I was quite a unique flavor. I like the biscuit flavor but a lot of people did not.

    My scale went out and in a bind I thought I could use the bathroom scale. Well it will not register under 25 lbs so i tried standing on it with the malts to get a weight. Problem is I can stand on it 3 times with the same amount each time and get 3 different weights. Guess I will just wing...

    Making a starter

    You want to pitch the starter when the yeast is still actively fermenting. I have never frozen my yeast, I have kept a flask of starter in the fridge for several months and it worked out fine. If your not going to use it put it in a sanitized beer bottle and cap and store in the fridge.
