    I'm also currently looking into a bigger and better Duda Diesel chiller. I have the 23A right now, 20 plate, but will most likely upgrade to their 30 plate long. I think running off into ferment takes about ten minutes right now, so the chiller gets worked hard.

    hmm, I'm all quick DC as well. You gave me an idea of possibly putting my plate chiller into a bucket of ice water to chill the entire thing down as wort flows.

    The aeration is happening directly out of the kettle, before the wort is cooled. So it's all hot and beat up at that point.

    The throttling is going on directly from the kettle valve, then that restriction goes to the chiller which then goes to the pump which then goes to the fermentor. This is about a 20 foot operation. From brewhouse to cold room.

    Ah, I see. Thanks. So maybe I never upgraded properly. I still have the same 20 plate chiller I used when I did small batches, now I attempt to chill 1BBl batches with it. Maybe time to get a big ass chiller.

    Dry hop advice requested

    Probably better to dry hop just before fermentation is complete to allow the yeast to clean up oxygen brought in by the pellets. As they break open they will introduce the oxygen, yeast can absorb.

    I wonder which, if any, pulls more flavor and aroma from the beer. In my experience of having used both gelatin and now biofine clear, I find that I don't notice much of a flavor loss from biofine as I did with Gelatin.

    Why transfer, just leave it. I see by the pic that high krausen is over, just leave it with lid snapped and co2 headspace will keep it safe for now. After ten days just package everything but the sediment. If you bottle, transfer carefully, if you keg transfer carefully.

    Leaving the gas on 24/7 is really, really going well. We get the normal tank usage out of the system and I am mentally free to worry about keeping taps going. Thanks for all the dedicated thought on all this everyone, I know how busy we all are.

    For this batch just snap the lid after 5 days, keep closed for 5 more days. Then at 10 days just rack to keg or whatever packaging system you use.
