    Adding water and OG

My theory as to why this is happening is that perhaps I'm not getting enough LME out of the canister. Would this explain the difference?

    Adding water and OG

So, in the past when I've made a 5 gal. batch from a kit, I would follow the directions, do a partial boil, and add water in the end to bring it up to 5 gal. Then I bought a refractometer. So now when I'm adding my water, I bring it up to the target OG, not the target volume. I assume it's...

Fermenting in a chest freezer - questions...

I'm 5 days into fermentation and everything's going nicely. I have my probe wrapped in a bubble wrap sheet and my thermostat set for 60. The carboy stick-on thermometer reads 62/63. The first day took a bit to get it down from 70ish, but after that it's been quite consistent.

Fermenting in a chest freezer - questions...

This weekend I’ll be brewing an AHS Hefeweizen with WLP300. I’ve heard this yeast is very temperamental and will produce distinct clove/banana notes depending on the fermentation temp (62DF will give you clove, 70DF will give you banana). I usually just ferment in an empty closet in my home...

    anchor brewery claims?

I've heard that the reason why beer (and other products with alcohol) can say things like "frost brewed", "natural carbonation", et al is because these things are regulated by the ATF (under the Dept. of Justice) and not the FDA (under the Dept. of Health & Human Services), which does not have...
