All Grain: What is the advantage?

I've been reading a lot on the techniques of all-grain brewing but I've not really come across anything which gives a good reason for why you should go all-grain. Is it mainly just wanting to really feel like you've produced you own beer, or can you actually produce a better beer or types which...

Expected increase in FG from using DME instead of sugar?

I've made up the Brewferm Ambiorix kit which calls for 1075g of sugar to be added. Instead, I used 800g of light spray malt and 300g of glucose. The kit says the beer should ferment down to 1.010 but I assume using the DME means that I can expect the FG to be somewhat higher. Does anyone know...

    Store at 10°C or 20°C?

The instructions on my beer kit say that after a couple of days in the bottle at around 20°C to move to 10°C for a week or two. How important is it to do this? I don't really have anywhere this cold - I could leave it outside I guess but there the temperature swings from almost freezing to about...

These all-in-one boiler mash tun things

I was thinking of getting one of these electric boiler/mash tuns but I don't really hear of anyone else using them. Are they any good? Not necessarily the model shown here - if anyone has advice on the best model to get that's helpful too. (See the link for a description)...

    Dry yeast vs. wet yeast?

It seems the more experienced brewers always seem to use wet yeast - either in test tubes or smack packs, but most kits come with dried yeast. Are there advantages to using one or the other?

Is there anything to see happening after bottling?

Out of interest I used one clear glass bottle when bottling so I could see if anything happens to the beer. After going into the bottle it is nice and clear but there's also a couple of grams of glucose priming sugar in there (which actually went as a boiled and cooled mix into the whole batch)...

    Ready to bottle?

Hi All, I'm making my first batch from a kit (Muntons Gold Old English Bitter). It's been fermenting 12 days now and in the last couple of days the beer has cleared nicely and the bubbling has slowed to a small bubble every minute or so; the o.g. has dropped to 1.015. Is it OK to bottle up...

Sugar OK for making yeast starter?

I want to start a batch of beer off this weekend but it's a kit with just a small dried yeast pack so I'm thinking it might be better to make a starter. The thing is, I have no wort and don't want to open the kit itself till I'm ready to start fermenting. Is there any reason why I couldn't...

    Uh-oh - old beer kit a problem?

I just started brewing from a kit (Muntons Gold: Old English Bitter) and I just noticed the kit is a year past its "best before" date; wish I'd noticed before I opened it! Is this likely to be a real problem? Everything was sealed in tins, it's certainly bubbling away fine, so I guess the...
