    Late extract additions and boil times

    If I shut down the boil at 15 mins to add dry extract, when should I restart my boil timer? I've been waiting until after I get a boil to restart the timer, but that adds a few minutes to the total time.

    Wax seal question

    I'm bottling my first mead this weekend and I have a couple questions. First is how high on the bottle do I fill to? My second question is how long should I wait after corking (natural cork, BTW) before I seal some of the bottles with wax?
