Entering a competition. 60 Shiling or 70 Shilling?

So, I made a scottish ale. OG was 1.034 so I was thinking I'd enter it as a 60 shilling. However at bottling I found the FG to have settled at 1.014 (Probably fermented a bit too cool.) So my FG was a point to high to be a 60 shilling and my OG was a point low to be a 70 so where would you...

    Sour mash after filtration/sparge

I did this. Soured 7 gallons for 48 hrs then boiled and pitched. Came out nicely tart.

    Advice on simple electric HLT

Hi All, I'm looking to build a relatively simple HLT. I'm not interested in directly heating the mash or doing step mashes. Don't intend to use a pump. I'll use gravity. My goal is simply to set controller to a desired strike/sparge temperature and wait. Would a simple heat stick like...

    Advice on pitching Roselare

I aerated. (Shook a bit) Pretty active fermentation so you might need a blow off tube. Good luck.

Citra, Simcoe, Riwaka, Amarillo, Nelson and Galaxy

Any chance we'll see the Nelson Sauvign available in 4 oz bags again? I've got so many hops that ordering by the pound isn't ideal. But I'd love to order a few 4 oz. bags of a couple of varieties. Thanks.

Question about long term storage. (Airlock?)

I was thinking about that. I might also consider the S type and see how much longer they last. Thanks guys.

Question about long term storage. (Airlock?)

I should've been more clear. Primary was with a sach. Brett is being added in the secondary. Thanks.

    Cool, thanks for the tip.

Question about long term storage. (Airlock?)

I brewed my first sour about six weeks ago. A flanders red, fermented with Wyeast Roselare. Last week I brewed a blonde that'll get some brett brux in the secondary along with fruit (pluots). This past weekend the flanders went into secondary, and I washed the yeast. (BTW. Hydrometer...

Used older yeast and now I'm having second thoughts...

Well, this beer has been kegged and generally speaking it seems to be "not so good". It still carried some DMS aroma after fermentation although most of it seemed to have blown off. I actually scrubbed the rest of it away by switching the gas and beverage out fittings of my keg and slowly...

Used older yeast and now I'm having second thoughts...

Thanks guys. I ended up adding half of the Notty. I'll use the other half for a brew this weekend. Ferementation was pretty strong before I went to bed and very strong this morning. A few inches of Krausen and a bubble every second so I'm breathing a little easier. I'm probably make it a...

Used older yeast and now I'm having second thoughts...

Brewed a beer this weekend and to my dismay I opened the fridge to find I didn't have the yeast I though I did. It was late Saturday night and there' no place open on Sunday. All I had on hand was some yeast that I'd washed and saved that was pretty old. Maybe 6 months? It didn't look fresh...

    Dry hopping hops

I use pellets. And I don't use any sock. I just dump them into the secondary. When I rack it out I put a strainer over the end of my racking cane and it does the job well. When I've used a bag in the past I didn't like the results as much. That's me.

Boiling hopped extract with a partial mash and more hop additions

Hey All, Was helping a friend move the other night and he gave me all of the brewing perishables that were laying around. This included a couple cans of hopped ipa extract. I plan on making an IPA for a party and using this along with a partial mash of some two row, biscuit and crystal...
