They likely aren't infected. Sometimes the bottle conditioning process can make some funky flavors, maybe some sour apple. Shoot, even when I keg the freshly CO2 infused beer tastes bad to me compared to a week later. It's really not that easy to get an infection.

Love that blog! I agree that a naan would work well, I use the Cooks Illustrated recipe. It's a little easier to make, you get a cast iron pan smoking hot, give a couple spritzes of water, slap the bread down, put on a lid, and let it steam for about 3 minutes and they're done. Works beautifully.

Lots of cool stuff going on here. Wafer fab, growing yttrium iron garnets for our signal generators, chemical milling, laser micro-machining, everything that isn't some kind of plastic is typically gold plated. It's like a fairyland for anyone in manufacturing.

There's something to it. Diastic malt is just flour made from malted barley(not DME or anything like that), so I'm guessing it has all of the qualities that barley malt would have. There are a lot more enzymes in malt than the main ones we take advantage of as brewers, beta/alpha amylase...

Somehow I knew when you said it made a giant loaf. I think the most popular recipe on there makes this massive loaf, like 3.5 lbs. I had one a few weeks ago. It was more or less exactly as you just described. I've still got quite a bit. It's good, but man it just needed a little more carbonation to lighten it and make it more fun to drink. Great flavor otherwise.

I don't eat much cured pork products, but the way it curved up into those nice little grease boats I had to have a piece or two.
