    Elderflower wheat

Here is the cereal mash that I did with the raw wheat and some base Pils. Using my "new" old late 50's Coleman 426B that I just picked up yesterday! Planning an all Coleman brewday for a Pre-Prohibition Lager with a fellow Coleman enthusiast in my HBC. After the cereal mash I emptied the thin...

    Elderflower wheat

Mashing my base weiss beer right now. Plan is to use flower petals in secondary. Considered making a vodka extract but we'll see how this turns out first. Going heavy on local Wisconsin ingredients: Sconnie ditch elderflowers, raw Wisconsin wheat, local Cascades, and harvested Lakefront...

    Dried Elderflower

Bumping this one as I'm making an elderflower Weiss as I type. Any recollection of how this one turned out??

    Elderflower wheat

So I've been looking for info any anyone doing beers with elderflowers in it. A few here and there, but no one raving about a great brew. I got into the whole fermentation hobby by making elderberry wines, so I know the plant well...just not the flowers. My main question comes on when to use...

    Northern Brewer Chateau Northern troubleshoot

Anybody?? C'mon, why is this beer hazy and scuzzy looking? Or at least the wrong kind of scuzzy looking? Also, the coolship wild ale has yet to show any activity. I need some infections!

    Northern Brewer Chateau Northern troubleshoot

Looking for some advice on what to do with this beer. In the picture that I hopefully attached, you'll see my warming chamber with my sours in it. Left 5g carboy is my all grain pLambic brewed last August (doing well, clarified, tart, nice pellicle), the troubled partial mash pLambic kit that...

New Glarus Moon Man Clone Help

FYI, I just sent a message to New Glarus on their general comment form looking for some GUIDANCE (not a recipe) on a beer in the style of their Thumbprint Olde English Porter (sour porter). I got a lengthy response that "while open discussion is a great thing" they refuse to share any shred of...

    Pellicle Photo Collection

That's a gorgeous infection. Looks like some sort of biodome lunar base! Now I need to go home and take pictures of my 7 month old pLambic to post!

Cultivating wild yeast from local honey

Anyone produce something drinkable out of this yet? I'm interested in integrating some sort of local funk/flavor into some brews. I'd like to construct a coolship, but this might be another good way to get some local flora & fauna into my beer. I brewed a cream ale last summer with local...

Capital Autumnal Fire All Grain Clone

Have you tried putting this "recipe" together yet? I had a post looking for advice on cloning AF a while ago but didn't rouse much help. One of my favorite beers. If you haven't tried Eisphyre yet, look around for it. It is AF on steroids. Less impressed with Eternal Flame, another AF spinoff.

Belgian Quad - Grains vs. Sugars, Yeasts

Ok, so I am in love with the Quadrupel/Abt style and I'm getting ready to brew one. I've been researching recipes in search of the answer to the dark sugars vs. specialty grains debate and I'm at a standstill . I even emailed and got a reply from Phil Leinhart from Ommegang which...

Pumpkin: how much is too much?

Last year I brewed an pumpkin wheat based on Northern Brewer's American Wheat extract kit and loved it. This year, I'm well into all grain and designing my own recipes so of course I want to make my own pumpkin ale. I'm shooting for a more rich, sweet, full bodied beer this year and I'm...

    Capital Autumnal Fire or Eisphyre

I'm a "malt-head" and I think I just discovered a new standard of maltiness: Capital Brewing Co's Capital Square Series Eisphyre. It takes their already fantastic Autumnal Fire Dopplebock then Eis-i-fies it. Smells just like my mashtun. I'm not yet to the point where I can taste something...

New Glarus Moon Man Clone Help

I'd love to see the clone work out because Moon Man turned me on to hoppy brews. A friend in my brew club brewed NB's "Jamil's Evil Twin" and it tasted in the ballpark of MM.

    Bacon!

I've never been a forum user, so I explored more after posting this thread and I see there are several prior threads. Will rack to secondary probably tomorrow, so I'll post any interesting results

How to get the bacon flavor in my Wake'n Bacon Breakfast Stout

A late comment judging by the posts in the thread, but I just brewed an a.g. porter with bacon in the primary. I did try just putting some Baco's in a shot of vodka x a couple days and it tasted like bacon. If this doesn't give me the flavor I want by just adding in to steep, I'll probably add...

    Bacon!

Anyone else out there ever tried the bacon beer recipe (or your own recipe with bacon) that was printed in BYO mag a year or two ago? I have. In late stages of primary right now. I created an "Imperial Smoked Malt Bacon Porter" that I'm calling, "That'll Do, Pig" and I just added 7 strips...

    JRBC of Northern Wisconsin

Hi, new to the forum. I kept getting search engine referrals here while recipe investigating so I figured I'd sign up. Profile says most of my info. Look forward to learning some stuff!
