    ferment lager yeast like an ale?

    i brewed a batch with some friends and they got a lager yeast instead of an ale. we don't have the option of chilling it with a fridge so what are we in for? i wanted to wait until we got the right yeast to pitch it but i was out voted and i'm now looking at it as an experiment.

    small batches

    i was wondering how to resize a recipe. is there a tool or chart available for this? i'd like to try a gallon of porter and some others to see how they are, anyone know where the resources are for this?

    checking status of bottles

    Is there any sort of shaking or tapping i can do to see if my bottles are carbonating? Anything besides opening a bottle? As you can tell, yo soy muy impaciente. :ban:

    Yeast Activity

    My first batch didn't bubble nearly as much as the second. Does low to moderate bubbling for 1 or 2 days sound healthy? Seeing them side by side the difference in bubble activity is huge. What is going on here? American Red Ale not much bubbling, Sierra Pale tons of bubbling.

    5 gallon water dispenser bottles

    Anyone ever used these, or object to using them?? A friend and i are brewing regularly now and we need more fermenters. He works at Vermont Pure a local water company and has a somewhat endless supply of these bottles. We have a batch in one now and its working great. Any thoughts??? :rockin:
