Just relocated to a dry country

Forgot to include adding 2 cups of sugar to apple cider before adding yeast.

Just relocated to a dry country

I use apple cider and bread yeast for my applejack wash. 1 tablespoon baker's yeast in one gallon plastic jug of cider, loosely screw the cap to allow gas to escape, 12 days @ 74F and you'll have 11% hard cider. Flat like traditional English hard cider, but add some club soda or 7up and it...

    Unsweetened Raspberry Puree Apple Cider

I've found that you really have to watch for the yeast freshness. Wouldn't hurt to add more yeast if you are adding simple syrup. My only other guess is that there were no additives in the raspberries or the apple cider. That could have retarded the yeast action. I have had to repitch other...

    Unsweetened Raspberry Puree Apple Cider

Sorry for the delay in responding. After reaching a stable gravity (mine stabilized at %6 ABV), I siphoned the brew off the lees with a cane, and filtered the brew into a priming bucket as it came off the cane through a fine mesh screen in a bottling funnel to remove the remaining raspberry...

    Unsweetened Raspberry Puree Apple Cider

I use a 5 gal polycarbonate water carboy and it fills to the 4.5 gal mark just below the start of the diameter reduction. There is some headspace, but I like that as it allows for more initial oxygen content (yeast like it at the beginning for propagation, what you want) by vigorously swirling...

    Unsweetened Raspberry Puree Apple Cider

This turned out to be the most popular of my brews among my friends. Almost two years later and an amazing amount of bottle carbonation. definitely fits in the sparkling category.

Million Scoville Unit Bhut Jolokia Hot Cider

Yes. Roasting brings out the heat and the skin allows the pepper to hold together

Million Scoville Unit Bhut Jolokia Hot Cider

I did a similar red sevina cider that tuned out much milder. I think that if you use a standard jalapeno. there won't be much heat. I'd rate the bhat cider at about the equivalent heat as a little more than straight tabasco.

Splenda/Honey/Sugar + Rainbow Root beer results

Chlorine is a not added as a molecule in Splenda and the element chlorine is used to replace elements in the sugar molecule (so much for the mustard gas myth perpetuated by the sugar lobby here in the US). Table salt has the element chlorine in it as well, do you avoid using it? It does...

    bottle bombs!!!!

I'm guessing the back-sweetening with additional apple juice. As a chemist I can confirm the other's postings about sorbate. You can overpower "sorbate preserved" juices by adding two packets of Red Star per 5 gallons and still get a good ferment if you only have access to sorbated juice. Used...

    Carboys plastic vs glass

I use the 3 and 5 gallon plastic containers for drinking water (they sell them in Walmart back in the hardware section). The advantages over the traditional PET carboys is that they have molded in handles that make it easier on the back when moving, and they are certified not to absorb flavors...

How Much Carbonating Sugar Per Bottle

I use the following link to calculate the priming sugar needed for the CO2 volume desired, entering 0.26 for the beer volume (it will calculate the amount for 1 liter that way): http://www.tastybrew.com/calculators/priming.html Then divide the amount of sugar by 1000 (converts to...

Million Scoville Unit Bhut Jolokia Hot Cider

This is a habanero pepper cider that has a VERY hot aftertaste. The Bhut Jolokia pepper is rated at 1,000,000 Scoville units! If you like really hot peppers, this is a great brew to accompany buffalo wings or a good chili. Also makes a great batter for spicy wings or onion rings. Bhut...

    Red Savina Hot Cider

This is a habanero pepper cider that has a moderately hot aftertaste. If you like hot peppers, this is a great brew to accompany buffalo wings or a good chili. Roast the peppers on the grill or in oven, then loosely mash with about two cups of the cider. Add to the primary and swirl generously...

    Unsweetened Raspberry Puree Apple Cider

Here is another raspberry cider recipe. The raspberry puree was the pure, de-seeded, unsweetened product from the local home brewing store's wine shelf and was suspended in cider before adding to the carboy. Yeast, pectic enzyme, and yeast nutrient were activated in warm filtered water before...
