    This went into the primary last night, 1.080 hydrometer reading. Pitched at around midnight or so, and fermentation is giong quite well 7 hours later. I don't think I've ever seen fermentation kick in this quickly! The mash was a killer... like trying to strain molassis...

    Opened bucket

    My primary bucket almost never bubbles through the airlock, but I haven't had a bad brew yet. Airlock bubbling is no indicator of fermentation activity, so don't worry too much about it. As long as your hydrometer readings show activity, you're fine.

    I'm so impatient, I can sympathize with this. However, I find that if I time my brews so that I'm too busy to bottle for at least 3 weeks, it forces me to sit back and let the yeasties work. Everything seems to clear up after those time periods

    Aeration

    That's a fantastic idea revvy. I've never worried too much about aeration with my beers, as I'm generally able to pitch quite soon after pouring the wort. I'm a little concerned now. Maybe my brews would have been better if I'd paid more attention to this.

    I've never actually used a secondary for my beers, I just let it sit in the primary for 3-4 weeks. I tend to wait for the kreusan to settle, and then I do two hydrometer readings a day or two apart. If they're consistent, I bottle.

    Even with the airlock, I once had to clean beer off my ceiling. That was a rough morning.

    Doing the math now. I believe I used 2.64lbs of the equivilant DME for each of the 3.3lbs of syrup. so: 2.64lbs extra light DME 3.64lbs wheat DME 0.25lbs carapils 0.25lbs crystal 20 2 oz saaz hops safale 05 1 tbsp irish moss 1 oz coriander orange zest

    I subbed DME the first time I made this. If my notes here are correct, I used 2.64lbs of DME. 1lb grain = 0.75 LME = 0.6 DME Please redo the math, I'm not sure if my notes are entirely accurate as they're over a year old!
