    Help with Maris Otter

    Hi, My local homebrew shop doesn't sell Maris Otter LME but I want to make a recipe that calls for 9.15 lbs of it. I am thinking of using either Victory or Biscuit malt in combo with Light LME to get close to Maris Otter. Thoughts? Another problem, the recipe calls for 3.15 lbs of Maris...

    Thanks David! I'm pretty sure that my problems are numerous. I used too much grain, not enough water and so my ratio was all off. If I add extract to the fermenter is there anything I should do or can I just pour it right in without any other prep? I figure I'll just use pale extract like the...

    At this point, is there anything that I can add to the fermenter to create more fermentation? I know that just pouring sugar in it wouldn't work, but is there anything at all?

    It was milled at the LHBS but I have no idea what the water to grist ratio was. How do you calculate that?

    When I took the temperature the wort was probably at 75 degrees F or so.

It seemed like all of the grains were soaked and the water was a pretty constant 154 but the gravity was way off from the recipe I was using.
