    Thanks for the replies! What I was 'blindly' shooting towards with this recipe was a Sierra Nevada Pale type ale. I know the recipe isn't right on, but I'm hoping for a full-bodied, hoppy, higher-abv pale ale. Hopefully with a little teperture control, I'll be able to get it to ferment down...

    Not enough sparge water?

    I guess my question is how can 2.2 gallons of water be enough to rinse that amount of grain? I plan to batch sparge, draining the mash tun, then adding sparge water (all 2.2 gallons!). Will this 1 sparge step be enough to get me a decent efficiency? Thanks!

    So the carbonation thing is somewhat solved, now on to the head issue. Why would these beers be pouring with little to no head?

    COLO you may have something there... I always put the newly primed bottles back down in the cold basement after a bottling session. In other words, the beer is at too low a tempereature for the yeast to reactivate?
